Banana Date Scones
-2 (228g) bananas, ripe & mashed
-1/3 cup (70g) brown sugar
-2 tbsp (15g) linseed meal/ground flax seed meal (create flax egg)
-2 cups (400g) pastry flour OR self raising flour
-2 tsp baking powder
-1/3 cup (75g) dates, chopped
-1 tsp vanilla extract
-1/3 cup (70ml) plant-milk
-Mix together all the dry ingredients.
-In a separate bowl, mix together the wet ingredients.
-Then add the dry and wet ingredients together in the same bowl. Use your hands to incorporate all the ingredients to form a dough.
-Transfer the dough to your baking tray lined with parchment paper. Flatten the dough ball into a round disc and use a sharp knife to cut into 6 or 8 portions.
-Bake for 20-25 mins at 210C or until slightly brown and the pieces are pulling away from each other.
-Take out of the oven to cool for about 10 mins, then enjoy!
