Chocolate Beet Muffins
INGREDIENTS:
-2 cups (200g) whole wheat flour
-1/3 (50g) cup cocoa powder
-2 tsp baking powder
-1/2 cup (100g) date paste
-1/2 cup (100g) applesauce
-2 cups (500ml) almond milk
-1 cup (200g) fresh beets, peeled & grated
DIRECTIONS:
-First place all of the dry ingredients into your large mixing bowl and whisk them well.
-Now add in the rest of the ingredients, and whisk together once more until creamy smooth.
-Pour the mixture into your muffin baking tray lined with parchment paper.
-Pop them into the oven at 200C for 20-25 minutes.
-Let them cool, then enjoy!
