Chocolate Chunk Cashew Cookies

INGREDIENTS:

-250g all purpose flour

-280g date paste

-1 tsp baking powder

-30g cashews, chopped

-30g non-dairy chocolate chips or chunks

-1 "chia egg" (1 tbsp chia seeds soaked in 3 tbsp water)

-1/2-3/4 cup almond milk

DIRECTIONS:

-Pour all these ingredients, except the chocolate, together into your mixing bowl and combine everything together well. 

-Once it begins forming a sticky clump, add in your chocolate chunks and stir once again. 

-On your tray lined with parchment paper, scoop out about 1/4 cup of the mixture and place it nicely on your tray, forming it into a cookie shape.

-Once all your mixture is on your tray, you can pop these babies into your oven to bake at 180C for 15-20 minutes. 

-Let cool, then enjoy!
