Chunky Monkey Bites
-200g gluten free oat flour or almond flour
-145g dates, pitted (soak in hot water)
-30g natural peanut butter
-45g raw cacao powder
-100g (1) ripe banana
-30g almonds, roughly chopped
-50g raw cacao nibs OR non-dairy dark chocolate, chopped
-First drain the water from the dates.
-Then add all of your ingredients (except for the almonds and chocolate), into your food processor. Blend it up until it begins clumping together.
-Now fold in the almonds and chocolate chunks.
-Scoop out a golf ball size of the mixture, and roll it into a ball with your hands.
-Place the balls onto a tray or plate and pop them into the fridge for 1-2 hours to firm.
