Cranberry Walnut Oatmeal Cookies
INGREDIENTS:
-100g instant oats
-250g dates (chopped & soaked in hot water)
-150g rolled oats
-"chia egg" (2 tbsp chia seeds soaked with 4 tbsp water)
-20g walnuts, chopped
-15g pumpkin seeds
-50g dried cranberries
-1 tsp cinnamon powder
DIRECTIONS:
-First add the 100g of oats into the food processor, and blend it up smooth into a flour.
-Now drain the water from the dates. And add the dates, the remainder of the oats, and the chia egg. Pulse blend.
-Add in the remainder of the ingredients and pulse blend a few more times until it's all well combined.
-Scoop out a golf ball size of the mixture and mold it into your cookie shape. Do this will all the mixture.
-Place your cookies on a tray lined with parchment paper, and pop them into the fridge for 2-3 hours to firm up. Then enjoy!
