No-Bake Sweet Potato Fudge Brownies

INGREDIENTS:

-400g sweet potato, steamed/mashed

-1/3 cup natural peanut butter

-1/3 cup golden syrup or your choice of sticky sweetener

-1/3 cup cocoa powder

-1/3 cup (25g) oat flour

-Sprinkled with 30g chopped walnuts

DIRECTIONS:

-In a small bowl, combine the peanut butter and syrup. Mix thoroughly.

-In large mixing bowl, add the sweet potato and the peanut butter/syrup mixture. Stir well.

-Now you can add in the cocoa powder and the oat flour, and mix everything together one last time very well.

-Pour this mixture into your baking loaf pan lined with parchment paper. 

-Sprinkle on the walnuts.

-Then pop into your freezer for 2-4 hours until it is set.

-Then enjoy!
