Pumpkin Date Cake
INGREDIENTS:
-300g steamed/mashed pumpkin
-250g soaked dates
-1/2 cup (175ml) nut milk
-1/4 cup peanut butter
-250g all purpose flour
-1 tsp cinnamon power
-1 tsp baking powder
Optional: Sprinkle with 25g pumpkin seeds
DIRECTIONS:
-In a large mixing bowl, stir together all of the wet ingredients. Then add in all the dry ingredients, and stir again.
-Once all is combined to a smooth texture. Pour this mixture into your baking pan lined with parchment paper and sprinkle with the pumpkin seeds.
-Bake at 190C for 35-45 minutes.
-Let cool, then enjoy!
