Chewy Chocolate Chip Fig Cookies

-150g dried figs, chopped (soak in hot water)
-75g dates, chopped (soak in hot water)
-165g gluten free oats
-35g pumpkin seeds
-1/2 tsp cinnamon powder
-25g raw cacao nibs or non-dairy chocolate, roughly chopped



-First drain the water from the dried figs & dates.

-Now add all the ingredients, except for the cacao nibs/chocolate, to your food processor, and blend it until it forms a large dough ball.

-Fold in the chocolate chunks or cacao nibs.

-Then scoop out a golf ball size of the mixture and mold it into your desired cookie shapes. Place onto your tray lined with parchment paper.

-Do this with all the mixture.

-Then pop your tray of cookies into the freezer for 2-3 hours to firm up.And then enjoy them!
